½ cup evaporated milk
1 egg

3 cups all-purpose flour
1½ cups yellow cornmeal
1¼ cups sugar
1 tablespoon plus 1 teaspoon salt
3 tablespoons plus 3 teaspoons baking powder
1 teaspoon baking soda
½ cup local honey
½ cup sour cream
3½ sticks butter
3 eggs
1 2/3 cups buttermilk
1 large yellow onion, sautéed and puréed

Serves 8-10 people

3 cups cooked sweet potatoes, mashed
½ cup sugar
2 eggs, lightly beaten
3 tablespoons melted butter
½ cup half & half
1 teaspoon vanilla
½ teaspoon salt

Topping:

3 tablespoons melted butter
½ cup firmly packed brown sugar
1/3 cup all purpose flour
1 cup toasted pecans, chopped

1 cup onion, chopped
1 tablespoon olive oil
1 teaspoon fresh rosemary
1 tablespoon fresh thyme
1 teaspoon coarse cracked peppercorns
8 ounces portobello mushrooms, cut into 1-inch cubes
16 ounces frozen chopped spinach, defrosted and drained
6 ounces herbed goat cheese, room temperature
1 cup grated Parmigiano-Reggiano
1 head garlic, roasted
1/2 teaspoon salt
4 whole eggs plus 2 egg whites
2 cups milk
1 loaf day-old multigrain bread

1 cup sea salt
1 gallon water
1 cup raw sugar or honey
1 bunch fresh sage
1 bunch fresh thyme
