Not-So-Deep-Fat-Fried Okra

1 pound okra
1 cup cornmeal
1 teaspoon salt
Olive oil spray

Preheat oven to 400°. Spray a cookie sheet or shallow baking dish with olive oil. Rinse okra well and cut into ½ inch slices. Beware – cut okra is slimy!

Mix salt with cornmeal and place in a gallon-size sealable bag. Add okra to bag and shake until cornmeal has coated all of the okra. Place on oiled baking dish and spray lightly with olive oil. Bake in oven for about 20 minutes, turning once after 10 minutes, until lightly browned. Serve hot out of the oven. Try dipping in ketchup!
