
A Taste of Summer
In true Pakistani fashion, these measurements are approximations. I encourage you to taste as you go and adjust the flavors to your own liking. Armenian cucumbers — like snake melons — are a variety of muskmelon that tastes like a mild, slightly sweet cucumber but is crisper, with thin edible skin and soft seeds. You can find them at Central Market, specialty Mediterranean, Middle Eastern and Asian grocery stores, farmers markets or grow them from seed.
DOOGH (AFGHAN YOGURT DRINK)
Makes 2-4 servings
1 cup plain Greek yogurt
½ cup grated Armenian cucumber or snake melon
1 handful fresh mint leaves from your garden (or 1 tablespoon dried mint)
1 cup carbonated water (you can use still water if you prefer)
1 large pinch salt
1 handful ice cubes
½ teaspoon dried rose petals, crushed between fingers (optional)
Add the yogurt, cucumber, mint and carbonated water to a pitcher or large bowl. Crush the mint leaves slightly in your hands first to release their aroma. Add a heavy pinch of salt and the ice cubes; swirl the mixture until the ingredients are fully incorporated. When serving, garnish with dried rose petals, dried mint or a fresh sprig of mint from your garden.
