A play on the French 75, hard apple cider provides a mellow effervescence and cool, fruit-forward flavor. The addition of rosemary makes for a more robust, autumn-friendly adaptation of this classic cocktail.

Makes 1 serving

1 ½ ounces gin
1 tablespoon lemon juice
½ tablespoon Rosemary Simple Syrup (recipe follows)
Bishop Cider Co. OG Cider (or any dry hard cider)

Shake first 3 ingredients in a shaker with ice and strain into a champagne flute. Top with Bishop Cider Co. OG Cider. Garnish with torched rosemary sprig.


In a small saucepan, combine 1 cup water, 1 cup sugar and 4 to 5 rosemary sprigs. Bring to a simmer until all sugar is dissolved, about 5 minutes. Remove from heat and let stand for 15 minutes. Strain and store refrigerated in sealed container
